Hace unos 30 años, un científico, Ian Hall, llevó unos pocos níscalos desde los pinares de Gales hasta Nueva Zelanda. Pocos años más tarde, gracias el desarrollo de un equipo multidisciplinar se empezaron a producir los primeros níscalos, Lactarius deliciosus en Nueva Zelanda. Este documental nos cuenta esta historia de la mano del Científico Dr. Alexis Guerin.

Pero el sorprendente mundo de la micología no termina en el campo. La cocina es un atractivo para los amantes de los hongos. La Chef Jasbir Kaur, de Ignite Colleges, nos sorprenderá con elaboraciones dulces y saldas que tratan de mantener el color naranja tradicional de los níscalos, sometiéndolo a largos periodos de deshidratación a temperaturas controladas.

Por su parte el Chef Paul Froggatt del Restaurante Huka Lodge, nos lleva a dar un paseo por el bosque y descubrir sus preparaciones. Un guiso tradicional de setas en una moderna presentación que resulta tan exquisita como atractiva a la vista.

Este documental forma parte del Congreso Internacional Soria Gastronomica, uno de los eventos micológicos más importantes del panorama internacional.

 

About 30 years ago, a scientist, Ian Hall, brought a few saffron milk caps  from the pine forests of Wales to New Zealand. A few years later, thanks to the development of a multidisciplinary team, the first níscalos, Lactarius deliciosus, began to be produced in New Zealand. This documentary tells us this story from the hand of Scientist Dr. Alexis Guerin.

But the amazing world of mycology doesn’t end with the field. The kitchen is an attraction for mushroom lovers. Chef Jasbir Kaur, from Ignite Colleges, will surprise us with sweet and salty preparations that try to maintain the original orange color of the chanterelles, subjecting it to long periods of dehydration at controlled temperatures.

For his part, Chef Paul Froggatt from the Huka Lodge Restaurant, takes us for a walk through the forest and discover his preparations. A traditional mushroom stew in a modern presentation that is as exquisite as it is attractive to the eye.

This documentary is part of the Soria Gastronomica International Congress, one of the most important mycological events on the international scene.
